the feel of one of those old knives was entirely different than anything you buy today. These are well used and many hung around the same shops for many many years. ink knives were often highly regarded and they are essentially the same as putty knives. In a former life I worked in many different print shops and they always had old equipment around. It is a trade off between the hardness and brittleness and the springyness of the steel, it has to do with how it was hardened and the carbon and trace alloys in the steel.
If you look at the surface of old ones you will see lines and marks and things from the steel being worked, much like old knives. Old ones won't have a chrome finish and they will rust but new ones will usually have a chrome finish or maybe stainless. This is a good thing to find at a garage sale because it is difficult to find the same quality with new ones.
